Its that time of year to be dazzled by all things red, white and blue for 4th of July celebrations. Ireland it seems is embracing more than ever our American friend’s holiday just as they have taken to heart our St. Patrick’s day. To make use of our recent BBQ weather I’ve taken a bit of Ireland and a bit of America and combined them to make Baileys Smores. Since The Restaurant TV show is back on screens Thursday March 23rd, sure I thought I would re-post this little piece about my experience last year.

The monster showed up just after midnight. As they do.
Conor was awake when it came. He’d had a nightmare. Well, not a nightmare. The nightmare.
It was the nightmare that Conor (Lewis MacDougall) refused to acknowledge. The one he dared not think about. The one that summoned the monster and the one the monster called ‘his truth‘.
Everything changed when his mother (Felicity Jones) got sick. For so long it was just the two of them. His father lived in America with his new family. The once frequent calls were now few and far between. It wasn’t just his home life that changed when his mother got sick. Conor’s school life changed too. First there were whispers. While Winter brings us the festive season, it also brings with it cold and flu. Even worse, it brings the dreaded and deadly manflu. A very rare strain of the ‘regular’ flu which has been known to strike down even the manliest of men. Many (men) describe the symptoms of manflu has being similar to that of child-birth. Personally I suspect it is worse. I’ve had the manflu and I’ve had to take to the bed for days with nothing but Netflix and prayers to see me through. The solution? Honey Vodka Shots. Long before the words ‘craft cider’ become trendy, the word cider conjured up the memory of cheap brown 2 litre plastic bottles and teenage hangovers. Ireland however has come on leaps and bounds and embraced the humble apple for all it is worth. Craft cider is now a big market and I’ll be the first to admit, I’m quite a fan of it.
