Recipe – Breakfast Bars

If you are like me, more often than not you are running out the door to work and don’t’ have time for breakfast.  This can lead to a couple of unfortunate results.

A) you arrive in work ‘hangry’

B) you arrive in work, having stopped in your local Spar laden with some kind of pastry and/or sausage sandwich (but with brown bread because you want to be healthy).

C) you just don’t get fed.

So to combat some of this I have below a very simple recipe for some tasty and filling breakfast bars.  I’m sure the ingredients could be refined to make them a little healthier but sometimes you just need a little fat. Feel free to adjust as you see fit.

All you need is 3 ingredients

This three ingredient recipe for breakfast bars is quick and easy and depending on the thickness will make about 12-14 bars.  Here’s what you need.

350g of your favourite muesli.  I chose the Flahavans Hi8 Muesli which comes with 8 different grains, seeds and fruits, including oats, apricots and sunflower seeds.

390g of condensed milk.  I opted for the ‘light’ version to be a little healthier.

75g of sultanas.

Ingredients

Gently heat the condensed milk in the pot. Heat not Boil ! You should feel it get thinner as you heat and stir it.

Heat the Condensed Milk

Weigh out your muesli and throw in some extra dried fruit at this point if you wish also. I chose sultans to go into mine. You could also use apricot, dried berries etc.

Weighing In !

Simply add the muesli to the pot and stir until it has all bound together in a sticky glaze.

and mix !

Line a baking tray with baking parchment and ensure you get it right into the corners.

Line The Tin

Spread the mixture evenly onto the tray and smooth into the corners.

Bake in the oven at 130C/260F for about 30-45 minutes, depending on whether you like them chewy or crunchy.

When you take them out you will need to let them cool down for about 15 minutes and then you can cut them into whatever size bar you like.  They will keep fresh in an air tight container for a few days for that perfect breakfast on the go.

Tip: I found it easier to peel off the parchment paper when they were still warm.

They are also great for a mid morning snack or some post gym fuel.
